• Sulfated polysaccharide (wide range of molecular weights)

• Found in brown algae and brown seaweedsuch as mozuku, kombu, bladderwrack, wakame and hijiki

Purpose and characteristics

• Protection against water-borne pathogens and other environmental challenges (e.g. osmotic stress).

• Fucoidans are polysaccharides characterized by a complex molecular structure and varying degrees of sulphation and acetylation.
